It's excellent. I use it combined with an equal amount of unsifted red wheat flour. It makes a bread loaf that has delicious flavor, moist and firm crumb and crisp crust. It rises nicely and makes a good-looking loaf.
Homestead flour is just the best I've ever come across. I use the whole wheat for sourdough and yeast breads and the results are consistently excellent. The cornmeal is the best too, it's all I'll use anymore others are poor substitutions.
