My wife and I started our mill in 2003 in a restored 18th-century gristmill in central Texas. We focused on milling and mixing wholesome, whole wheat products for our own children and community. We looked for the best ingredients we could find, emphasizing local, organic and chemical-free. Over the years, we have developed personal relationships with many of the farmers who grow our corn, oats, wheat, sorghum syrup, maple syrup and more. Our experience of knowing our producers personally and their growing practices has assured us of the quality of the products. The whole organic certification program has shifted over the years and is now geared to large manufacturers. Consequently, this makes it economically difficult to earn and maintain organic certification for smaller food producers.
However, as a small, family-operated gristmill, we give attention to detail and cleanliness to ensure high-quality products. Our entire manufacturing process is chemical-free, from storing our grain and raw ingredients to milling and packaging. We have attached organic and/or chemical-free certificates for the main ingredients we use.
